I think the obvious reason that we never heard about these challenges is that they were never supported by the losing candidate or his/her party leadership. I was very much opposed to Trump, but I did not even know about the whole certification process/possible challenges in Congress in 2016. Nobody discussed all that because the outcome of the election was never really questioned.
